Grilled Fish with Pineapple Salsa


This is a great light summer meal, that anyone that enjoys fish will love.
You need
1 can pineapple chunks,drained
1/4 cup drained chopped pimento
1/small red onion finely chopped
1 jalapeno pepper, seeded and chopped
1/4 cup vegetable oil
3 tablespoons rice wine vinegar
2 tablespoons packed dark brown sugar
1/2 teaspoon black pepper
6 firm fish fillets(salmon,flounder,halibut)
How to
Stir pineapple,pimento,onion, jalapeno pepper,2 tablespoons oil, the vinegar,brown sugar and 1/4 teaspoon black pepper in a bowl and refrigerate for 30 minutes
Brush the fish with the remaining oil. Sprinkle with the remaining black pepper
Lightly oil the grill rack and grill fish for 5 minutes or until it flakes easily when tested with fork. Turn the fish once during grilling Serve the fish with the pineapple salsa
